Crockpot Swedish Cabbage Rolls


We've had some cool weather here in Bellingham, so I decided to make a crockpot meal that would warm us up a bit, Swedish Cabbage Rolls.

I used one of my old recipe books, Crockery Cookery by Mable Hoffman (Bantam Books, 1975).


Swedish Cabbage Rolls

12 large cabbage leaves
1 beaten egg
1/4 cup milk
1/4 cup finely chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1 lb. lean ground beef
1 cup cooked rice
1 (8 oz.) can tomato sauce
1 tablespoon brown sugar
1 tablespoon lemon juice
1 teaspoon Worcestershire Sauce

Immerse cabbage leaves in a large pot of boiling water for 3 minutes or until limp. Drain and remove the heavy center rib.

Combine egg, milk, onion, salt, pepper, raw ground beef, and cooked rice. Place about 1/4 cup of the mixture in the center of each leaf. Fold in the sides and roll ends over the meat to make a package. Place the finished cabbage rolls in a crockpot coated inside with vegetable spray

Combine the tomato sauce, lemon juice, sugar and Worcestershire Sauce. Pour over cabbage rolls. Cover and cook on low for 7-9 hours. Makes 6 servings.

Margy's adaptations: I added 1/2 teaspoon thyme to the meat mixture and 1/2 teaspoon Italian seasoning to the tomato sauce mixture. That may not be very "Swedish," but I like the taste.

  1. Oh that looks so good. My cousin makes cabbage rolls all the time and they are delicious - the recipes sound similar. I've never made any - I really must. I think our most common crockpot recipe is roast with onions, potatoes and carrots - just a regular pot roast. I always get a big roast and we get several meals out of it - then have leftover meat for sandwiches, bbq beef on buns and such. I also make lasagne in a crock pot - nothing spectacular - just layer fried up ground beef - lasagne noodles, sauce and cheeses (cottage cheese and shredded cheddar) as you would for oven lasagne. No need to cook the lasagne noodles - they will cook just fine in the crock pot. One dish and a lovely meal, and nothing to boil over in the oven.

    1. I can only use the crockpot when I'm in town. It takes too much electricity for the cabin. Wayne makes a good roast on the BBQ with the temp on low, just like an oven roast. The lasagna sounds good and a whole lot easier than my oven version. - Margy

  2. I love using the crock pot, especially in winter so that the delicious smells waft through the house all day. I've got a few of my favourites posted at my site but will add more over the colder months.
    I've got all the ingredients for cabbage rolls this week, but do tend to cheat and chop the cabbage and cook it as a casserole.

    1. I do that with enchiladas, just stack them up instead of all the rolling. So much easier. - Margy

    1. Not sure why they are Swedish verses any other variety. But my great grandfather was Swedish, so maybe that's why they caught my eye. - Margy
